Tomato soup is the best anwser for a cold winter night. This is a quick and simple meal that makes you warm up fast!
1 Yellow Onion
1 Garlic Clove
28oz can of Crushed Fire-Roasted Tomatoes
3C Vegetable Broth
1C Coconut Milk
Spices:
1t Red Pepper Flakes
2t Italian Seasoning
First, heat up a large pot on the stove on medium heat. Cut the onion roughly and saute for about 5 minutes, or until golden brown. Then, cut your garlic glove before adding into the pot. Add in the spices and saute for another minute. Add the crushed tomatoes and the vegetable broth. Bring to a boil. Transfer the soup into a blender. You may need to do this in batches. Be very careful--It's boiling hot! Blend until smooth. Then, transfer back into the cooking pot. Once everything is blended add in your coconut milk and serve immediately!
Prep time is about 15 minutes.
Serves about 4 people.
