We're big-time sandwich lovers! Nothing feels better than knowing you have a healthy lunch waiting for you in the fridge whenever you want it. This is a simple recipe that is like a tuna sandwich, only it's a fake tuna sandwich ;)
1 15-oz can of chickpeas, drained and rinsed
1/4C vegan Mayo
1T Dijon Mustard
1T Apple Cider Vinegar
1/4C Celery, chopped
1T Chives, chopped
pinch of cayenne pepper
freshly ground pepper
Prep time is 10 minutes
Serves 4 sandwiches
Begin by chopping your celery into bite size pieces. Also, chop up your fresh chives in small pieces. Then, place them both into a food processor. Next, rinse and drain your chickpeas and put them in the food processor. Add in the rest of the ingredients: vegan mayo, mustard, ACV and spices. Close the lid and pulse the mixture a few quick turns. You want to keep the Funa thick with a lot of whole beans intact for texture. You might need to stir it up between pulses. Once it's to your liking, mix it with a spatula and serve! Top with any of your favorite veggies: kale, tomatoes, onions, vegan mayo/mustard
PS- this is an awesome meal for a picnic lunch.. just get some whole wheat baguette bread!
