Chickpea Burger with Engine 2 Ancient Grain Buns AND Curry Fries

We're excited to participate in Engine 2's #ShowUsYourBuns competition! We had to use their new Ancient Grain Buns to make a burger or sandwich! We decided to go for the chickpea burger! It's super easy and delicious!

Ingredients:
1 Can of Chickpeas, rinsed
1/2C Rolled Oats
1/3 Whole Wheat Flour
4 Garlic Cloves, Minced
1t Cumin
1t Curry
2T Lemon Juice
1T Natural Peanut Butter
Handful of Raisins and Pepitas

Engine 2: Ancient Grain Buns

Place all of the ingredients in a food processor, except the chickpeas, raisins and pepitas. Mix until everything is mostly smooth. Then, add the chickpeas to the food processor. Pulse a few times so that some of the beans are still intact for texture. Now, fold in the raisins and the pepitas. With your hands, form patties out of the mixture.

On a non-stick skillet over medium-heat, place a patty and cook for 5-8 minutes on each side. Serve immediately with your favorite toppings! We chose red onions, tomatoes, lettuce, avocado and ketchup.


Curry Sweet Potato Fries:
1 Sweet Potato
2T Vegetable Broth
1T Curry Powder
Pinch of Salt and Pepper, to taste

Pre-heat the oven to 425F. Cut the sweet potato into small fries and place into a large bowl. Add the broth and spices. Stir everything together. Prepare a baking sheet with parchment paper and spread the fries evenly on the pan. Heat for 30-45 minutes, or until golden brown.
